My organisation has produced a factsheet called 'Documentation Timescales' which UK museums use to estimate the amount of time to allocate to inventorying their collections - it's online at http://www.collectionslink.org.uk/manage_information/doc_timescales. The factsheet also links to a number of Case Studies illustrating how long it has taken different types and sizes of museum to work through their collections.

Hello Colleagues,

I have been asked to provide industry based estimates on the hours
required to undertake a wall to wall inventory of an art collection
within a University. The collection holds approximately 1000 works,
mostly paintings.
Has anyone done something similar recently who would be prepared to
share information including the number of objects and the time taken
to assist us with estimating cost, etc
